#43 5-Minute Salad

5-min salad – arugula, chickpeas, and cherry tomato salad πŸ… this is a gluten and dairy free salad. It has 182 calories, 9.3 grams of protein and 10.5 grams of fiber πŸ™ŒπŸΌ .

β€’ 1 teaspoon olive oil.
β€’ 1 teaspoon balsamic vinegar.
β€’ ΒΌ teaspoon Dijon mustard.
β€’ Sea salt.
β€’ ground black pepper.
β€’ 2 cups arugula.
β€’ 1 cup sodium-free canned chickpeas.
β€’ 10 cherry tomatoes halved.
β€’ 1 scallion.
β€’ In a large bowl, whisk together the olive oil, vinegar, and mustard. Season with salt and pepper. Add the arugula and toss.
β€’ Add the rest of the ingredients, (this is a recipe for 2 servings).
